KOREAN BEAN SPROUTS 

4 cups very fresh bean sprouts 
2 tbsp sesame oil 
1 bunches green onions, sliced thinly 
1 tablespoons chopped garlic 
Salt to taste 

Rinse the bean sprouts and set aside. Thoroughly wash and stem the spinach and set aside. Bring about 1 1/2 inches of water to the boil in a large pot, add the sprouts, cover, and let the water return to a boil for 2 minutes, remove from the heat and drain. 

Combine the sesame oil, green onions and garlic in a small bowl. Place the sprouts in a bowl and pour dressing over, toss by hand, taste and adjust. Serve room temperature. Serves 6.
