ROASTED GREEN BEANS
Preheat oven to 450 degrees and set a rack in the upper level. Toss one pound of trimmed green beans with ½ cup olive oil, 3 smashed garlic
cloves, 3 fresh thyme sprigs (halved), salt and pepper (to taste).
Spread the beans in a single layer and roast, tossing occasionally, until tender and lightly brown (about 15 minutes).
In the meanwhile, mix together 3 mashed anchovy filets, 2-3 tsp fresh lemon juice, and the finely grated zest from the lemon.
Discard the thyme sprigs and transfer the beans to a bowl. Toss with anchovy mixture and serve warm or at room temperature. |
