GARBANZOS IN ANCHOVY SAUCE

1/2 cup olive oil
3 tablespoons unsalted butter
4 anchovy fillets, drained and minced
3 tablespoons minced scallions
3 tablespoons minced parsley
2 cups cooked garbanzos (chickpeas), drained and rinsed
Lemon juice to taste
salt and pepper to taste

Heat the oil and butter in a stainless steel or enameled skillet over moderately high heat until hot. Add the anchovy fillets and cook, mashing them with the back of a fork or spatula and stirring, for 1 minute. Add scallions, parsley and chickpeas and cook, stirring, until the chickpeas are just heated through then season with lemon juice, salt and pepper to taste. Serves 4
