LAMB AND BARLEY SOUP
2 lamb shanks
1 c pearl barley
1 c green split peas
2 onions, chopped
2 cloves garlic, crushed
3.5 quarts water or vegetable broth
Salt and pepper
Put all ingredients in a soup pot. Cover, bring to a boil, and then simmer gently for 2 hours. Remove meat from shanks and return to pot.
Taste and adjust seasoning. Serves 8 |
