GRAPE GAZPACHO
2 lbs. seedless green grapes
1 cucumber, peeled and chopped
2 Tbsp. chopped dill
4 green onions, minced
1 cup yogurt
2 Tbsp. cream cheese
1 pint half and half 1/4 cup rice vinegar
2 tsp. olive oil
Pinch of salt, white pepper and cayenne to taste
Slivered almonds for garnish
Blend all ingredients, except chives and almonds, in a food processor. Season to taste. Serve in soup bowls and garnish with chives and almonds. |
