BARLEY BEAN SOUP
½ c chopped onion
1 tbsp butter
¼ c pearl barley
½ c dried white, lima or kidney beans, soaked overnight
2 c vegetable or chicken broth
1 tbsp chopped parsley
2 strips crisp bacon crumbled (optional)
1 tbsp coriander seed, crushed
½ tsp salt
Sauté onion in butter until tender, add barley and sauté until light brown. Add beans, stock and remainder of ingredients. Cover, bring to a boil, and simmer 1 hour until beans and barley are tender. Serves 4 |
