ZHUG
1/2 cup chopped cilantro
1/4 cup chopped parsley
1 ripe tomato, diced
3 to 5 garlic cloves, chopped
1 or 2 green chiles, stemmed, seeded, chopped
Juice of 1 lime, or enough to moisten the mixture
Salt, Cumin, Curry Powder and Tumeric or cardamom to taste
Combine all ingredients in a processor or blender and process until smooth. Best used within 2 hours spooned on top of grilled anything, or into Mediterranean-style salad-sandwiches. Serves 4 to 6.
