CREAMY TARRAGON DRESSING
½ cup buttermilk
¼ cup sour cream
2 T roughly chopped fresh tarragon
1 T capers
¼ t salt
¼ t fresh ground pepper
½ cup olive oil
1 T of champagne vinegar
Combine buttermilk, sour cream, tarragon and capers in a food processor and puree until smooth. Season with salt and pepper and add the oil and vinegar. Blend well and refrigerate. Makes about 1 cup. |
