CHICKEN CURRY SALAD WITH CHUTNEY DRESSING 

3 cups cubed cooked chicken 
1 Granny Smith apple (unpeeled), cored and chopped 
1 cup seedless green grapes 
1 cup chopped celery 
1/4 cup diced red onion 
1/4 cup raisins (optional) 
1/4 cup slivered almonds, toasted 

3/4 cup mayonnaise 
3 tablespoons chutney, preferably Major Grey's 
1 teaspoon curry powder 
2 tablespoons fresh lime juice 
1 teaspoon grated lime zest 
1/4 teaspoon salt 

Whisk together mayonaisse and other dressing ingredients until smooth, cover and refrigerate until ready to use. In a large bowl, combine chicken, apple, grapes, celery, onion and raisins, toss the ingredients with enough dressing to coat. Sprinkle with almonds. Serves 4 to 6
