Perfect Squid Stir Fry
12 inches of 1" diameter frozen squid strips*
1/2 cup each of broccoli florets and thinly shaved leek
1 inch fresh peeled ginger root and 3 thai chili minced finely
Sweet black soy sauce
peanut and sesame oil
Partially defrost squid strips (remove skin if needed) and cut into 1/2 by 1/4 inch strips, then cut strips into 1 inch
lengths and set aside on a paper towel to dry.
Prepare broccoli florets in 1 inch pieces, slice leek thinly and mix the ginger and thai pepper together, set aside.
Cooking: Heat an 8 inch (20 mm) sauté pan and pour in enough peanut oil to coat the center, swirl around the pan and drizzle in a generous amount of sesame oil. Bring to hot and sauté shredded leek and
broccoli florets for 1.5 to 2 minutes, add squid, ginger-pepper mix and sweet soy to taste and stir fry for 1-2 minutes until squid is tender.
Do not overcook. Serves 2
*Squid (calamari) is sold in a frozen form, about one inch
square strips and of varying lengths.
