SALMON LOAF
2 cups cooked or canned salmon (drain off packing liquid)
1/2 cup fresh breadcrumbs
4 tbsp melted butter
2 beaten eggs
2 tbsp minced onion
1 tbsp minced fresh parsley
2 tsp minced capers
1 tsp grated horseradish
Dash of Worcestershire, tabasco and soy sauces
Salt and pepper to taste
Preheat the oven to 350F and butter a loaf pan. Mix all ingredients together and transfer into the loaf pan. Place in oven and bake until top is lightly browned (usually about 25 to 30 minutes). Serves 6
