SALMON WITH HABANERO BUTTER

6 tablespoons soft butter 
3 tablespoons minced canned pineapple 
1 to 2 habanero chiles, seeded and diced 
1 green onion, minced 
2 salmon fillets, 4 to 6 ounces each 

Combine the butter, pineapple, chiles and green onion in a food processor and process until you have a smooth butter. Shape into 2 balls and refrigerate. 

Pan-fry the salmon fillets until done to your liking. The moment they are done, place half a ball of the habanero butter on each fillet. Cut the other butter ball in half and place on a serving platter. Top with the cooked salmon fillets. Serves 2
