SWEET ONION TARTS
Roll out a sheet of frozen puff pastry to about 1.5 times its original size. Cut it into 4 rounds of 6" diameters or for appetizers cut into 2" squares. Place on a lightly oiled sheet, pierce several times with a fork and bake for 15-20 minutes at 400 F.
Melt 2 tbsp butter in a skillet and add a large onion (1/4" slices). Sauté until slightly tender and add ˝ tsp fresh thyme, and salt and pepper to taste.
Divide the onion mixture between the tart shells and top each tart with crumbled chevre (about 8 oz.).
Place tarts under broiler for 2-3 minutes until cheese begins to soften and brown slightly. |
