ONION BLOSSOM

Preheat oven to 375 degrees. Lightly grease a baking dish with olive oil. 
Peel the skin from 2 very large red onions and trim the bottoms so that the onions sit flat. Starting at the center of the top of each onion and working around it, cut 20-30 slits about three quarters in to the onion for a flower effect. Transfer to the baking sheet.

In a small bowl, combine ½ cup plain breadcrumbs, 1 tsp garlic powder and ½ tsp paprika. Set aside.

In another bowl, whisk two egg whites lightly with a fork. Pour the whites over the onions to cover thoroughly and then sprinkle evenly with the seasoned breadcrumbs. Sprinkle or mist lightly with olive oil and bake for 40-50 minutes, until the onions are lightly brown. Serve immediately. Serves 4-8.
