Roasted Carrots in Honey
4 T butter
6 carrots (about 1 1/3 pounds), peeled and quartered lengthwise
2 T orange juice
1/4 c honey
Preheat oven to 450° and line a shallow baking pan with foil. Put 2 T butter in the pan and place in the oven until the butter melts then roll carrot slices in the butter to coat on all sides. Return to the oven and roast until the carrots are tender and starting to brown (20-30 minutes).
Meanwhile, combine the remaining 2 T butter, orange juice and honey in a small saucepan and simmer until mixture begins to thicken. When the carrots are tender, glaze with the honey mixture and return to the oven until the carrots caramelize.
