PAPRIKA DRESSING

20 grinds black pepper
2 tbsp paprika
2 tbsp sugar
1 tbsp crushed garlic
1 tbsp Dijon mustard
1 egg
1 c vinegar
3 c oil

Place the pepper, paprika, sugar, garlic, mustard and egg in a large mixing bowl. Whisk them together until they form a soft paste.

Add the vinegar and mix well, until the paste is dissolved. Slowly add the oil and continue whisking until the mixture is creamy.

Refrigerate until ready to serve.

Note: The original recipe (from world famous chef Marc Dullin) made an enormous batch (6 quarts). It was:

1 tsp salt
1 tsp ground black pepper
1 cup paprika
2 c granulated sugar
½ c chopped garlic
1 c Dijon mustard
4 whole eggs
½ quart red wine vinegar
½ quart solano red wine vinegar
3 quarts salad oil
