ONION BLUE CHEESE SAUCE

2 yellow onions
3 tablespoons fat or olive oil
2 cups chicken stock
salt and fresh black pepper to taste
3 to 4 tablespoons heavy cream
2 ounces blue cheese (or to taste), crumbled

Peel the onions, cut in half lengthwise, and slice thinly.Heat a skillet over medium low heat, add the fat and the onions, cook until soft and lightly brown, then add stock and simmer until reduced by half. Set aside while you cook whatever meat you desire, remove the meat from the skillet and keep warm. Put onion and stock mixture to the hot skillet, bring to a simmer (scrape skillet to pick up browned bits), add the cream and return to a simmer, then whisk in the blue cheese. Taste and adjust seasoning, then spoon over meat. Makes enough sauce for 4 servings.
