GALA'S BURGERS

1 pound sirloin steak, chopped
Half an ounce of dried porcini, broken in finger tip size pieces and rehydrated in boiling water to cover
1 tsp dark sweet soy
Salt and pepper to taste

2 fresh round rolls cut in half horizontally
Fresh spicy greens (like frisse or arugula)
Olive oil 
2 slices Gorgonzola or similar cheese

Mushrooms are soft in about 20 minutes and can be removed to a small skillet, then carefully pour soaking liquid in (leave sediment in bowl and discard), boil over medium high heat (stir occasionally) until liquid is very thick.  When cool,  chop mushrooms coarsely and return with  juices to large bowl. Add meat, soy, salt, and pepper, mix gently then divide into two thick patties. Place on foil-lined baking sheet. (Can be made 1 day ahead. Cover and chill.) 

Preheat broiler and broil cut side of rolls until lightly toasted, remove and arrange bottoms on plates then top with greens.  Broil the burgers on a rack pan or skillet until done to taste, top with a slice of cheese, broil until cheese begins to melt, and place on roll bottoms, top with a demi glaze or other flavorful sauce and roll tops.  For 2 burgers.
