MEATY CHILI (with Cinnamon) 

1 pound ground beef 
1 pound ground pork (chicken or turkey) 
Salt 
3-4 tbsp oil 
2 carrots, peeled, diced 
2 large onions, diced 
2 cinnamon sticks 
1/2 tsp. ground cumin 
2-3 tb. chili powder 
14 1/2-ounce can pureed tomatoes 
2 cups chicken broth 
1/2 cup water 
1 1/2 cups cooked black beans, drained and rinsed) 
1/4 cup fresh orange juice (juice of about 1/2 orange) 

Break beef and other meat into large chunks, season with salt. Heat some oil in a Dutch oven, add about half of the beef letting it brown undisturbed for a few minutes, then stir and brown on all sides, remove. Repeat with remaining beef and meat in batches (add more oil if needed). Drain off all but 2 tbsp fat, add carrots, onions and spices and saute until tender (6-8 8 minutes). Return meat to pan, add tomatoes, broth, water and beans. Simmer about 45 minutes. Remove cinnamon sticks, stir in orange juice, taste and add salt to taste. (Freezes well.) Serves 6-8.
