CHICKEN BREASTS WITH CITRUS GARLIC MARINADE
2 tablespoons finely minced orange zest
3/4 cup freshly squeezed orange juice
1/2 cup red wine vinegar
1/4 cup honey
1 tablespoon Dijon mustard
6 garlic cloves, finely minced
1/2 cup minced green onions (white and green parts)
1/4 teaspoon freshly ground pepper
1/4 teaspoon hot red pepper flakes
1 teaspoon salt
4 bone-in chicken breasts, with skin
Combine orange zest and juice, the vinegar, honey, mustard, garlic, green onions, pepper, red pepper flakes and salt, add chicken, cover and refrigerate for from 2 to 4 hours. (Add salt later if you want to marinate for a longer time.)
Grill chicken directly over medium-hot coals, covering grill and turning chicken often until cooked through, about 30 to 35 minutes. Serves 4 |
