MARINATED SALMON

Slice salmon very thinly, lay it on a plate, then spoon over the top with a marinade made from the following:

4 finely minced shallots
1/2 c lemon juice
1 tsp chopped fresh herbs (basil, tarragon, chives)
salt and white pepper to taste

Whisk together well and add 1 c olive oil

Pour over prepared salmon, cover with plastic wrap and allow it to marinate for about an hour before serving.
