Lobster Salad Sandwich Rolls

1/2 pound cooked lobster meat, cut into 1/2-inch chunks 
1/4 cup celery, diced 
2 tablespoons mayonnaise 
Juice from 1/4 lemon 
Salt and pepper, to taste 
1 tablespoon chopped chives 
4 hot dog buns 
1/4 cup unsalted butter, melted 
4 large butter lettuce leaves 

Gently mix the lobster and the celery together, add mayonnaise and lemon juice, season with salt and pepper to taste and gently stir in chives. 

Open the hot dog buns and brush the insides with the melted butter. Lay each bun, butter side down, in a skillet or grill pan over medium heat and toast until golden brown. Line each bun with a lettuce leaf and fill with 1/4 of the lobster salad. Serve immediately. Makes 4
