PEAR ALMOND UPSIDE DOWN CAKE
1 ½ sticks of butter
¾ cup granulated sugar
1 teaspoon vanilla flavoring
½ teaspoon almond extract
3 eggs
2/3 cup finely ground almonds
1 cup cake flour
1 teaspoon baking powder
¼ teaspoon salt
4 tablespoons butter
¼ cup light brown sugar
2 Bartlett pears
Cream butter and sugar in a mixer. Add vanilla and almond extract. Add eggs one at a time, beating thoroughly after each. Add almonds and mix well. Sift together flour with baking powder and salt. Add to egg-almond mixture.
Slice peeled pears to about ¼ inch think. Melt butter in pan on top of
stove. Add brown sugar and heat until sugar is melted. Pour butter and sugar mixture into a round cake pan that has been buttered. (I use a 10" deep dish pie pan) Place pear slices on hot mixture. Spread cake mixture over pears and bake in 375 degree oven for about 35 minutes. Cake will be springy to the touch. When done, let cake set for a couple minutes, then run knife around edges to loosen and invert into serving plate. |
