GINGER ORANGE COOKIES
2/3 cup butter, cut into pieces
1/2 cup granulated sugar
1 cup flour mixed with 1/2 teaspoon baking powder
3 tablespoons candied ginger, minced
4 tablespoons grated orange zest
1 small egg
Preheat the oven to 400 degrees. Combine the butter and sugar in a food processor and pulse until well mixed. Add the flour-baking powder, the ginger and orange zest; mix. Add the egg and mix again. You will have a very sticky dough. Drop the dough by the heaping teaspoonful onto ungreased cookie sheets, leaving about 2 inches between each cookie; they will spread as they bake. Bake until the edges are lightly golden, about 8 minutes. Remove from the oven and let cool completely on the cookie sheet. This will take about 1 hour. The cookies will crisp as they cool.
