CARROT SPICE LOAF
2 ¼ c all purpose flour
1 ¼ c rolled oats
¾ cup brown sugar
½ c chopped dates
4 tsp baking powder
½ tsp baking soda
½ tsp cinnamon
¼ tsp ground ginger
1/8 tsp ground cloves
½ c frozen apple juice concentrate, thawed
1/3 c vegetable oil
¼ cup water
4 egg whites
1 c shredded carrots
Heat oven to 350 F and lightly oil an 8X4 or 9x5 pan. Combine dry ingredients except 3 tbsp oats and mix well. Add combined liquid ingredients, mixing until just moistened. Fold in carrots. Spread evenly into pan and sprinkle with remaining oats. Bake 70 minutes; cool 10 minutes to remove from pan. |
