Welsh Rarebit

3 T unsalted butter, softened
1 T all purpose flour
1/2 c porter or ale
1/4 c whole milk
1 t dry mustard
white pepper to taste
1.5 c extra sharp Cheddar, coarsely grated
1 large egg yolk

baguette, cut diagonally in about 1/2 inch slices

Preheat broiler. Spread one side of each baguette slice with butter, place on broiler tray (butter side up) and broil 2-4 minutes until golden brown.

Melt 1 T butter in a small saucepan over low heat, whisk in flour and cook 1 minute. Whisk in beer and milk in a steady stream, then whisk in seasoning and cheese. Bring to a simmer over medium heat, whisking until smooth (about 2 minutes). Remove from heat and immediately whisk in egg yolk. Serve over toasts.   Serves 6-8
