TOASTED WALNUTS WITH OREGANO

2 1/2 tablespoons olive oil or unsalted butter, melted 
2 teaspoons dried oregano, crumbled 
1 teaspoon salt 
1/2 teaspoon cayenne 
2 cups fresh raw walnuts 

Preheat the oven to 350 degrees. Mix everything except the walnuts together, then stir in walnuts, coating them well. Scatter the nuts on a baking sheet. Roast for about 10 minutes, stirring once. Remove from the oven when they smell good. Let cool before serving or storing. 
The nuts will keep for a few days in a tightly sealed tin if made with butter, longer if made with oil. Makes 2 cups 

Note: Any other herbs can be used to complement other courses!
