Spicy Whipped Feta (Htipiti)
1/3 pound feta, preferably Greek or French
4 pickled green peperoncini
1/2 teaspoon dried oregano
1 garlic clove, sliced
Generous pinch hot red pepper flakes
2 tablespoons extra virgin olive oil, or more as needed
Combine the feta, peperoncini, oregano, garlic and pepper flakes in a food processor and blend well. With the machine running, add the olive oil through the feed tube until the feta is smooth and creamy. Taste and adjust the seasoning. Transfer the spread to a bowl and let rest for 1 hour to allow the flavor to develop. Serve with bread or raw vegetables. Makes about 1 cup |
