BRIE WITH ROASTED GARLIC AND OLIVES

4 - 8 oz. brie wheels
1/4 c olive oil
2 whole heads of garlic
1/2 c pitted black olives, halved
1/4 c finely chopped Italian parsley

Place the garlic in a heavy saucepan with the olive oil. Heat the garlic and sauté for 6 minutes, cover, reduce to medium-low heat and continue to cook for 15 minutes or until garlic is soft. Remove garlic from the oil and allow it to cool.

Carefully slice the rind off of one side of the brie. Sprinkle with parsley. Peel garlic cloves carefully to avoid breaking. Slice the cloves to within 1/8" of base and fan out over the brie alternately with olive slices. Place on a platter and garnish with whole parsley sprigs.
