Almonds Toasted in Fresh Thyme and Sea Salt
2 cups whole almonds
2 tablespoons extra virgin olive oil
3 tablespoons fresh thyme leaves
2 tablespoons coarse sea salt
Preheat oven to 300°, put the almonds on a baking sheet and sprinkle them with the olive oil, turning to coat well. Spread in a single layer and bake until you can smell the aroma of the toasting nuts, and they are pale gold inside when cut in half, about 15 to 20 minutes. Remove from the oven and toss with the thyme. Using a mortar and pestle, crush the sea salt to a medium texture. Toss the almonds with the sea salt. Let cool to room temperature.
